RX Bar Copy Recipes

I wanted to have healthier snack bars to eat and I was told about the RX Bar. These are made from real food, not processed, however these are more than $2 each. So I looked around and found a recipe and found they are very easy to make, no baking. I made up my own recipes from what I learned. So I am making these for my snacks.

Base Bar Ingredients

  • 3/4 cup unflavored egg white protein powder
  • 1 cup medjool dates
  • 1 cup raw almonds
  • 3/4 cup raw cashews
  • 2 tbsp water

Flavorings for different flavored bars

Coffee Chocolate

  • 1/4 cup raw cocoa nibs
  • 2 tsp espresso powder

Chocolate Peanut butter

  • 1/4 cup raw cocoa nibs
  • 2 tbsp PB2 powdered peanut butter

Peanut butter

  • 3 tbsp PB2 powdered peanut butter

Add Base bar ingredients to food processor. Decide on flavor and add Flavorings for bar you want. Process in food processor till it forms a thick paste or dough. Put into a 9×13 pan lined with saran wrap and press or roll out till evenly spread. Cut into 12 bars and wrap in saran wrap or seal with food saver or seal a meal.

Easy Canned Smoked Salmon

Salmon is a healthy food to eat as a snack on crackers instead of potato chips or other less healthy foods, but smoked salmon is expensive. Why not take some time and make a batch of smoked salmon yourself with this recipe. It can be stored at room temp before opening for 1 year or more and then kept for up to 2 weeks in the refrigerator after opening . Here is the easy to follow recipe:

Ingredients

  • Three Large salmon Filets
  • Dry Rub
    • 1/2 cup brown sugar
    • 1/4 cup kosher salt
    • 1 tsp garlic powder
    • 1 tsp onion powder
  • Add to jar when canning
    • 2 drops liquid smoke per jar.
    • 1 tsp olive oil

Directions
Mix Dry rub ingredients in a bowl and sprinkle on salmon and leave set for 1 – 2 hours in fridge. Rinse off salmon and cut into pieces to roll up (Skin side in) or cut into about 2 inch strips and add to jar so that they will fill the jar. Mix olive oil and liquid smoke. Pour over salmon and process in pressure cooker at 10lbs for 100 min. Remove from pressure cooker and cool. If any of the lids did not seal (if they are not sucked in and you and push them down and they pop in) put them in the refrigerator and use them within 2 weeks. If they have sealed then they can be stored on the shelf unrefrigerated.

These are great accompaniments to morning coffee or just for a snack. Kids love them and can have them with milk. If you use the healthier coconut oil in place of the butter, you will add a hint of coconut flavor (which I like). If you go totally vegan and decide to use the banana, it will add in a banana flavor which also gives it a nice flavor. If kept dry and sealed, these will last for several months.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup sugar
  • 1 teaspoon baking powder
  • Pinch of salt (1/16 teaspoon)
  • 1 large egg (Vegan Substitute: 1/2 to 1 smashed banana, or Vegan Egg replacer equiv. to 1 large egg)
  • 2 tablespoons unsalted butter, softened or coconut oil
  • 1/3 cup raw almonds
  • 3 tablespoons milk or soy milk

Directions

Preheat oven to 350 degrees. Add 1st 5 ingredients in to food processor. Process till mixed. Add remaining ingredients in and process for about 7 seconds. It will not fully come together as a dough but will be mixed. Pour onto some plastic wrap and roll up. Squeeze together to fom into a 3″ wide roll about 1″ high.  Remove plastic wrap and put onto foil lined baking sheet. Bake for 25 minutes. Remove from the oven and let cool for 10 minutes. Then slice crosswise into 1/2 to 3/5″ slices using a serrated knife. Arrange slices layed out flat in a single layer on the baking sheet and bake at 350 for about 30-40 minutes. Remove from the oven and let cool for 30 minutes then you can eat them. If you are going to store them, put them in a sealed container after they are completely cool. They will last several months if they are around that long.
