Ginger Black Refried Beans (Chino Bandito style)

  • 1 cups of dry black beans soaked overnight
  • 1 tbsp fresh grated ginger
  • 3 cloves garlic
  • 1 tsp of Caldo de pollo (dry bouillon)
  • 1/4 tsp of white pepper
  • 1/4 tsp of dry mustard
  • 3 tbsp brown sugar
  • 1 teaspoon salt
  • 3 tablespoons of olive oil
  • Enough water to cover beans 1/2″

Place the beans in a pot, and fill with enough water to cover with 2 inches or so. Bring to a boil and then let simmer for 3 hours or so, stirring occasionally. Add in all other ingredients and with an immersion blender blend beans till mostly smooth.  Simmer for about 30 minutes or more till the desired thickness is achieved.

  1. This is a fantastic recipe. Have made it multiple times and it is always a hit. I do cut the brown sugar down to 2 tbs but otherwise spot on.

  2. It says twice in the directions to add all the other ingredients. I’m not sure when to add what. Am I missing something? These are my favorite beans!! Can’t wait to make them!
