Healthy Great Tasting Whole Wheat Pancakes

I like the nutrition that comes from less processed ingredients. So I have an inexpensive flour mill (hand operated) and some whole wheat grain that I like to use occasionally since most of the flour bought in the market is heavily processed. You get extra nutrition from the less processed flour. I use the flour in pancakes and tortillas and these pancakes came out great with a deep rich taste.

Ingredients

  • 1 2/3 cups of quality whole wheat flour (I ground my own)
  • 1/3 cup of all purpose flour
  • 1 3/4 cups of 2% milk
  • 1/2 tablespoon melted butter
  • 1/2 teaspoon kosher salt
  • 1 teaspoon of vanilla extract
  • 2 large eggs
  • 1/2 teaspoon cinnamon
  • 4 1/2 teaspoons baking powder
  • Butter for cooking

Directions

Put dry ingredients into a mixing bowl and stir until combined. Add eggs and milk to a bowl and stir. Add 1/2 of the eggs and milk mixture along with the vanilla to a bowl and stir till combined, then add the rest and stir again till combined. Heat a non stick pan on medium heat till hot, then a small amount of butter to a pan to coat the bottom, then pour in enough of the batter for the desired size pan cake. Cook till you see the edges are starting to look dry and there are bubbles in the center. Flip the pancake and cook on the second side till lightly brown. Then server and enjoy.

6 Minute Steel Cut Oats (Cinnamon Roll Flavor)

This is a great quick and inexpensive meal to make in the morning when getting ready for work and is very healthy. You get the health benefits of the oats and the cinnamon. If you use maple syrup, it is a little less refined than sugar also. You need to use the Coach Steel Cut Oats and not regular steel cut oats since they are cut differently and cook quickly.

Ingredients

  • 1/3 cup of Coach Steel Cut Oats (I have found these at Costco also)
  • 1 cup of water
  • 1-2 tsp of maple syrup (Can use sugar instead)
  • 1/2 tsp of ground cinnamon

Directions add all ingredients to a bowl with about 1″ of space from the fill level to the lip of the bowl. Microwave for 6 minutes at 40% power (On a 1000 watt microwave). Any higher setting and it might boil over.

This is a easy to make side dish which goes great with a meal. It goes especially well with chili (See my chili recipe).

Ingredients

  • Cooking spray to grease pan
  • 1/4 cup butter or margarine (1/2 stick)
  • 1 cup milk
  • 1 large egg
  • 1 1/4 cups  cornmeal
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • optional
    • 1/4 cup Frozen corn (thawed)
    • Jalapeno diced.

Directions

Add all ingredients and any optional ingredients for variations to a bowl and mix until combined. There may still be some lumps but that is ok. Pour into greased baking pan and bake in a preheated oven at 400 degrees for 20 mins. After 20 mins insert a toothpick and if it comes out clean it is done. Serve hot with butter.

Delicious Middle Eastern Style Eggs

Ingredients

  • 1/2 Bell Pepper chopped (I used yellow, can use green or red)
  • 1/2 medium sized onion chopped
  • 1 jalapeno
  • 2 cloves of Garlic finely copped
  • 1 tsp cumin
  • 1/2 tsp ground black pepper
  • 2 tomatoes diced
  • 3 oz of tomato sauce
  • 1/2 tsp salt
  • 5 eggs
  • Cilantro for topping
  • 2 tbsp olive oil

Directions

Add olive oil to pan along with Bell pepper, onion, garlic, and jalapeno and fry over medium heat till soft. Add in tomato, cumin, 1/2 tsp black pepper, and tomato sauce heat till bubbling and then reduce heat and cover. Cook covered for about 30 mins. Crack eggs over the mixture and cover again and continue to cook for about 15 minutes covered. If you like you yokes broken break them and cook longer. When done sprinkle cilantro over and salt to taste.
